Livio generously shares another family recipe. This time it is from his Italian side, homemade potato gnocchi.
Ingredients:
For 6 – 8 Persons
1 Kilo of Potatoes
150/200 grams White Flour
2 Egg Yolk
3 Pinch Salt
2 Pinch Pepper
Boil the potatoes, set them to cool. Once manageable, peel them and then mash them either using a potato masher or by simply by using a fork.
Add the salt, pepper and egg yolk to the mashed potatoes and continue to mash. Slowly scatter the flour over the mixture and knead until you gradually achieve a dough like consistency.
It is always best to use your hands!
Then once you’ve made what feels like dough, take a handful of your mixture and begin to roll making long and thin snake like rolls. Make sure they are at least 1.5 cm thick. Make these rolls using your entire mixture.
Once you have a long line of rolls, and have used up your entire mixture begin to cut the rolls into small squares, drizzle flour over them in order for them not to stick to each other and be careful that they are all the same size so they cook uniformly.
Once they are all cut put them in a pot of boiling water with a table spoon of salt.
When they float to the surface it means they are cooked and ready to be mixed with the sauce of your choice!
It is best to use a perforated ladle to remove them from the water.
